Lima: Mazamorra Morada

It’s naturally purple pudding. No food coloring necessary. Mazamorra morada gets its brilliant hue from purple corn. Elena Santos invites us into her shop, Mi Dulce Compañía, in Lima, Peru, so we can watch her whip up a batch of purple perfection. She boils the corn in water until it turns into a nectar, adding cinnamon and clove as well as dried fruit, diluted sweet potato flour and lime juice. One spoonful, and it’s easy to see why this treat is all the rage in Lima.
